Breakfast in Bed: Cherry Lime Smoothie and Coconut Granola

A bright and icy smoothie is the perfect way to start a hot summer day…especially if someone else makes it and brings it to you in bed! Not too sweet yet totally refreshing, the taste of cherry lime is an unexpected and delightful complement to homemade coconut granola. Private chef, Tehra Turnbaugh Thorp shares her straightforward recipe below. Ingredients

  • 1 lime, juiced
  • 1 cup of cherries, pitted
  • 1 container of lime Greek yogurt; Chobani Blended Key Lime recommended 
  • 1-2 cups of ice

Preparation and Cooking

  • Juice the lime. Hint: If you microwave the lime for 10 seconds, it will help release the juices and make the lime easier to juice.
  • Pit the cherries with a special tool or slice off one side of the cherry with a knife and pop out the pit. Throw away the stem and the pit.
  • Add the lime juice, pitted cherries, yogurt and ice to the bowl of a blender and pulse until well blended.

Ingredients

  • 2 cups coconut granola
  • 1/2 cup raw, slivered almonds
  • 1/2 cup coconut, dried and shredded
  • 1 cup steel cut oats
  • 1 pinch of sea salt
  • 2 tablespoons of  coconut oil; Spectrum Organic recommended
  • 1/2 cup honey (buy local!)

Preparation and Cooking

  • Preheat oven to 350 degrees Fahrenheit.
  • Prepare a baking sheet by lining with parchment.
  • Toss all dry ingredients into a bowl.
  • Melt coconut oil and honey together in a saucepan on the stovetop.
  • Pour the liquid over the dry ingredients and toss well.
  • Bake at 350 degrees for 15 minutes then toss the mixture and turn the baking sheet in the oven.
  • Bake for another 5-10 minutes.
